Chicken Pizzaiola is an Italian inspiration. Italian trained Chef Cris uses lean tender chicken breast fillet after first trimming the fat off. He then cuts open the breast fillet to create a pocket. Cris stuffs the pocket with cheese, spinach, black olives, capers, pistachios which he bakes to juicy perfection. As a result, the chicken remain moist and tender. We supply the cooked chicken with a delicious tomato sauce, accompanied by Roasted Vegetables.
