The second vegan dish of our spring menu. Above all, lentils is one of my favourite dishes when I was growing up. My younger sister used to cook it with beef in a light curry sauce. However, as we move away from eating too much red meat, we have instead paired the lentils with sweet potatoes. I thought I was going to miss the beef. Instead it has resulted in a simply delicious light curry served with roasted vegetables and brown rice. Of course your other half can still have their beef on the side, while you enjoy your vegan bliss.
Ingredients: Lentils Sweet Potato Curry (Water, Black Lentils, Sweet Potatoes, Tomatoes, Light Coconut Milk, Spinach, Lemon Juice, Sunflower Oil, Mixed Spices, Herbs, Garlic, Ginger, Salt). Steamed Brown Rice and Roasted Vegetables (Eggplant, Zucchini, Sweet Potatoes, Carrots, Onions, Herbs, Garlic, Oil, Salt, Pepper).
