Description
A vegetarian and Gluten Free dish that has also been a hit with the meat eaters. We created this dish through a fusion of European (Roasted Vegetables) and Mauritian (Aromatic Tomatoes) cuisines. Best eaten with Lemon rice.
Ingredients: Tomatoes, Mix of Seasonal and year round Vegetables (Aubergines, Zucchini, Capsicum, Sweet Potatoes, Onions), Rice, Lemon juice, onion, garlic, ginger, herbs, spices, olive oil, salt, pepper.
